Rice A La Brasiliera latin american 6 tablespoons unsalted butter 1 small onion; minced 2 large cloves garlic; minced 3 cups rice freshly ground white pepper; to taste 5 cups chicken stock or water salt; to taste In a large (at least 4 quart) flameproof casserole dish, melt butter. Stir in onion and garlic; saute, stirring occasionally, over low heat until transparent (3 to 4 minutes). Stir in rice and white pepper; saute until rice turns translucent (about 2 minutes). Add liquid and stir once. Cover tightly and cook over very low heat for 25 minutes. Let rest, covered, on a warm part of the stove for about 10 minutes.
