Grated Beets Russian Style

beef, russian, veal, vegetables

2 tablespoon margarine
4 cup coarsely shredded beets
2 tablespoon lemon juice
1 1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 cup water
1 tablespoon flour (all-purpose)

Heat the butter in an 8-inch skillet. Add the beets, lemon juice, salt, pepper and water. Cover and cook over moderately low heat for 15 minutes, stirring from time to time. Sprinkle the flour over the beets, but do not stir in. Cover and cook another 5 minutes. Cookbooks On/Line Recipe Database
