Meatloaf In Sour Cream Sauce - Pc

beef, dairy, main dish, polish, pork

1 stale roll (1 oz)
1 small onion; chopped
1 tablespoon fat
3/4 lb top sirloin or chuck of beef
1/4 lb pork
1 egg
1 salt and pepper
4 tablespoon fine bread crumbs
3 tablespoon fat for roasting
----SAUCE----
1 fat from roasting
1 cup sour cream
2 tablespoon flour
1 salt
1 bouillon cube
1 paprika
1 allspice
1 bay leaf
1 caramel for coloring

: Soak rool, drain. Brown chopped onion lightly in fat. Rinse meat, grind together with drained roll. Mix meat with onion, egg, salt, pepper. Form. Place on board sprinkled with bread crumbs, shape into fat roll. : Heat fat, place meat in long, narrow baking tin, dot with fat, place in oven, baste while roasting. : Prepare sauce. Add cream and flour to fat from roasting, add salt, 1 bouillon cube and spices, stir while cooking, (if necessary color sauce with caramel). Dilute with water, pour over meat and roast for a short time with the sauce. : Slice into 1/2 inch slices when done, place on long serving platter, pour over part of sauce, serve remainder in gravy boat. : Serve with potatoes, dropped dumplings, macaroni, and beets. _Polish Cooking_ Zofia Czerny, 1961 & 1975.
