Polish Cwikla - Grated Beets With Horseradish - Pc

8 medium beets
1 wine vinegar
2 teaspoon caraway seeds
3 tablespoon horseradish; grated
1 salt
1 sugar

: Wash beets, cut off thin root, boil in a large amount of water, drain, cool. : Dilute vinegar with water so that it is not too tart. : Rinse caraway seeds, clean horseradish, grate. : Peel the beets, grate. Combine all ingredients, add salt and sugar if necessary, place in jar; the beets should be covered with the diluted vinegar so that they do not mold. : Wrap the jar in waxed paper, keep in cold place. : Prepare a few days before using. : Serve with boiled beef, ground patties and other meat and vegetable dishes. _Polish Cookbook_, Zofia Czerny, 1961 & 1975.
