Chlodnik - Sour Milk Soup With Beet Greens - Pc dairy, polish, soups, vegetables 8 oz beet greens (young leaves with stal; ks of red beets) 1 cup ; water 1 lemon juice or vinegar 1 cucumber or dill pickle 3 eggs 4 cup sour milk 1 cup sour cream 3 tablespoon chopped green dill & chives 1 salt : Rinse beet greens, cut and cook in water adding small quantities of lemon juice or vinegar. Cool. : Peel cucumber or dill pickle and slice into thin rounds. (Joanna says Claussen brand pickles are most similar to what she knew in Poland). : Shell and chop the hard-boiled eggs. : Stir sour milk thoroughly and mix with beet greens and stock.
