: Add egg to milk and mix well. Add flour and beat until smooth. : Add water and salt to batter and stir until smooth. Heat griddle with a long handle over a uniformly-heated pad (not on an open flame). Grease the whole surface of griddle with fatback held on a fork. Pour batter on greased pan. Move griddle so that the batter spreads evenly. Pour off the batter that does not cling to the griddle. The pancakes should be thin. Bake batter over a hot pad. When it has steamed off somewhat, grasp pancake with fingers of both hands and turn. Bake until done. Slide the baked pancake onto a plate. Heat griddle and grease with fatback and bake the following pancake. It is best to bake pancakes on two pans of equal size. _Polish Cookbook_, Zofia Czerny 1961 & 1975.
