Potatoes Braised With Fat Back And Onions - Pc jams, polish, side dish, vegetables 15 medium potatoes 5 tablespoon fat back (smoked) 2 medium onions 1 salt and pepper 1/2 cup ; water 2 tablespoon fat Cut fat back in strips. Chop onion finely. Peel potatoes, slice, place part on bottom of saucepan. Place half the fat back on top of the potatoes, sprinkle with part of : onion, salt and pepper. Place another layer of potatoes, top as above, cover with potatoes. Dot the whole with fat, add water, cover saucepan, place in hot oven. Bake until all the water evaporates.
