Potato Cutlets - Pc jams, polish, side dish, vegetables 10 medium potatoes 3 tablespoon fat 1/2 small onion 1 egg 1/2 tablespoon potato starch 1 salt and pepper 1 nutmeg ----BREADING---- 5 tablespoon flour 1 egg 5 tablespoon bread crumbs 5 tablespoon fat for frying Clean and pare potatoes, cook, drain, put through food chopper. Chop onion, brown ligtly in fat. Combine potatoes with onion, egg, potato starch, salt, and spices. Place potato mixture on floured board, shape into a thick roll, divide : into parts (1-inch thick). Shape in flour into high, small round cutlets, dip in egg and bread : crumbs, score. Heat fat, fry to light gold on both sides over high heat. Serve on long platter.
