Spinach With Roux - Pc

4 cup spinach; cooked
3 tablespoon fat
4 tablespoon flour
3/4 cup milk
1 salt
1 garlic (optional)

: Cook water with salt. : Wash spinach, remove roots, rinse in parts under running water in a colander. : Place in boiling, salted, water; cook uncovered on high heat until spinach is crushed easily between fingers. : Drain spinach thoroughly; grind in food chopper. : Melt fat, add flour, saute lightly. : Dilute the roux with milk, stir while heating. : Combine spinach with the roux, add salt and garlic to taste, heat, arrange on platter. Serve with fried or boiled eggs, with potatoes, groats, or as a side dish to meats, omelets or filled pancakes. _Polish Cookbook_, Zofia Czerny, 1961 & 1975.
