Stewed Onions - Pc

onion, polish, side dish

20 medium onions (of uniform size)
3 tablespoon fat
2 tablespoon flour
1 salt
1 sugar
1 wine vinegar

: Peel onions, rinse, drop in boiling water, parboil and drain. Cover with boiling water again and cook covered until tender. Prepare yellow roux with fat and flour, dilute with the cooking liquid, heat, combine sauce with onion. Add salt, sugar and vinegar to taste.
