It includes string beans, new carrots, cauliflower, new potatoes with green dill, all cooked separately with a few slices of tomatoes and a fried egg. : Other vegetarian dishes such as puddings, souffles, casseroles, cutlets consist of more complicated ingredients and require more skill and time to make. Although they contain a variety of products, they are not as nutritious as the simpler dishes, since the processes which they undergo during preparation lower their nutritious value ; that is why they are not use extensively. Vegetables may also be served as side dishes. These dishes should be skillfully and tastefully combined. Thus, for vegetarian dinners, we select usually vegetables with a tart and pronounced flavor since they supplement the mild and bland flavor of flour dishes. We use carrots, string beans, cauliflower, tomatoes, and potatoes but not cabbage with veal. : We usually combine all forms of cabbage with pork. Tomatoes, stirring and Navy beans, raw and braised onions make a good side dish for lamb. We serve beets, carrots, cauliflower, string beans in sour cream with beef. In addition to cooked vegetables a raw salad is a "must" as a second dish.
