Uszka ( Dumplings ) With Meat Stuffing - Pc chocolate, dumplings, mushrooms, polish, side dish ----STUFFING---- 5 cup leftover meat 1 oz stale bread 1 milk for soaking 1/2 small onion 2 1/2 tablespoon fat 1 salt and pepper 1 tablespoon bread crumbs 1 egg white ----DOUGH---- 2 cup flour 2 eggs 2 tablespoon ; water 1 salt : Cook meat in small amount of water and drain. Grind meat. Use stock for soup or sauce. : Soak white bread in milk, squeeze out milk and grind. Combine with meat, cream well. : Cut up onion, fried in fat until golden. : Mix onion with meat and bread mixture. Add salt and pepper. : Saute adding bread crumbs. Cool. Mix stuffing with egg white. : Prepare salted, boiling water for cooking the uszka. : Sift flour, mix with eggs and water and knead well. Roll out dough thin and cut into squares (1-1/2" x 1-1/2" square). : Place stuffing into square, fold into triangles and seal sides. Fold in bottom flaps to shape the uszka. : Cook in boiling, salted water. Serve with clear barszcz, cabbage soup, fish, or pea soup. _Polish Cookbook_, Zofia Czerny 1961 & 1975.
