Pancake Pasties With Meat Or Brains - Pc meats, pastry, polish, side dish ----STUFFING---- 1/2 small onion 1 1/2 tablespoon fat 4 tablespoon stale bread 1/2 lb cooked meat 1 egg white 1 salt and pepper 1 ; broth or water ----BATTER---- 1/2 cup milk 1 egg 1 cup flour 1/2 cup ; water 1 salt 1 piece of fatback to grease pan ----BREADING---- 1 1/2 eggs 3 tablespoon bread crumbs 2 1/2 tablespoon fat for frying Prepare stuffing Chop onion, saute in fat until yellow. Soak bread in water and squeeze out moisture. Grind cooked meat and bread. Combine with egg white and onion. Add salt and pepper. If necessary dilute with broth. Prepare batter. Combine milk, egg and flour and mix thoroughly with hand beater. Add water and salt. Heat pan and rub with bacon fat until the whole surface gleams. Pour batter on hot pan. Pour excess batter back into mixing bowl. Cook pancake on an even flame. When the batter is firm, turn over helping with fingers or a spatula. Cook on other side and place on upturned plate. Spread stuffing on pancakes. Turn up sides of pancakes. Form into rolls of even length. Mix 1-1/2 eggs with a fork. Roll pasties in egg, drain, roll in bread crumbs and fry in fat. Fry on all sides.
