Barley Soup (Krupnik) crockpot, grains, mushrooms, polish, soups 1 cup pearl barley 2 quart meat stock 1/4 cup margarine or butter cut in 1 small pieces 2 carrots, diced 2 potatoes, diced 4 oz canned mushroom pieces 1 stalk celery, chopped 1 giblets from one turkey or 1 chicken, chopped (optional) 1 teaspoon dried parsley flakes 1 1/2 teaspoon salt 1/2 teaspoon pepper 1 cup dairy sour cream (optional) 1 sprigs of fresh dill 1. Combine barley with 1 cup of the meat stock in large saucepan. Bring to boiling; reduce heat and simmer until all stock is absorbed. Add butter piece by piece, stirring. 2. Boil begetables and, if desired, giblets in the remaining stock until crisp-tender. Then add barley, parsley, salt and pepper. Cook until barley is tender. 3. Garnish each serving with sour cream, if desired, and dill. Enjoy.
