Prune Or Dried-Fruit Soup (Zupa Z Suszonych Sliwek Lub Su fruits, polish, soups 8 oz prunes 6 cup water 2 cloves 1 piece of lemon or orange 1 rind 1 tablespoon potato flour dissolved in 1/2 cup cold water 1 sugar to taste 1 rice or 1 butter-fried white bread 1 croutons or 1 puff pastry pellets Soak 8 oz. prunes in 6 c. water 2 hrs., add 2 cloves, a piece of lemon or orange rind (with white inner skin removed), and cook in same water until tender (about 15 min.). Add 1 T. potato flour dissolved in 1/2 c. cold water, sugar to taste, and heat briefly. Serve hot over rice or with butter-fried white bread croutons or puff pastry pellets. Variation: Use 4 oz. prunes and 4 oz. mixed dried fruit. Some familes serve this soup instead of dried-fruit compote (kompot z suszu) on Christmas Eve. For a richer taste, fork-blend 1 raw egg yolk with 1/2 c. coffee cream, stir in 1 c. hot soup, and add mixture to pot. A pinch of cinnamon may also be added.
