Seminole Indian Fry Bread #1

----INGREDIENTS----
2 cup all-purpose flour
3/4 teaspoon salt
1 tablespoon lard
1 vegetable oil for frying
----DIRECTIONS----
1/4 cup instant lowfat powdered milk
2 teaspoon double acting baking powder
3/4 cup luke warm water

In a small bowl mix together flour, powdered milk, baking powder, and salt. Cut in the lard until mixture resembles a coarse meal. Add water and knead lightly for 1 minute. Turn out onto a well floured surface and knead until a smooth ball forms. Divide the dough into 8 equal parts and shape each into a small ball. Cover with an inverted bowl and let rest for about 10 minutes. On a floured surface roll each ball into a 6 inch circle. Poke a hole in the center of each round of dough. In a skillet heat about 1-1 1/2 inches of vegetable oil, until smoke appears. (375ř F.) Fry the dough rounds one at a time until golden brown on both sides. Drain on paper towels and serve hot. Makes 8
