Baconed Hominy native, vegetables ----INGREDIENTS---- 8 strips bacon cut into small pieces 2 lb cooked hominy 1 salt and pepper to taste 3 scallions coarsely chopped ----DIRECTIONS---- Fry the bacon pieces in a large skillet until well browned and crisp. Add the hominy, salt and pepper and cook stirring continuously for 6-7 minutes. Add scallions and continue cooking for an additional 5 minutes. Serve immediately.
