Petticoat Lane Chicken Garlic Stew - Jjc

3 tablespoon olive oil
10 centiliter garlic; peeled (yep, 10)
1/2 cup parsley; chopped
1/2 cup celery leaves; chopped
1 teaspoon dried tarragon
1 tablespoon salt
1 teaspoon ground white pepper
1/2 teaspoon allspice
1/4 teaspoon ground cinnamon
1 1/2 cup dry white wine
6 chicken leg and thigh pieces; cut in two

Don't let the garlic scare you- it' s discarded after baking. _Very _ tasty. Preheat oven to 375 F degrees. Pour olive oil in a pot with cover. Add garlic and all ingredients including chicken. Cover tightly, place in oven for about 1-1/4 hours. The chicken does *not* brown. Discard garlic. Serve with bread. Makes 6 servings. _The Joys of Jewish Cooking_; Stephen and Ethel Longstreet, 1974.
