Cold Apple Soup

3 cups water
2 tablespoons water
4 tart green apples
peeled, cored, & cut into 1/2" cube
1/2 cup sugar
plus sugar to taste
Minced zest and juice of 1 lemon; or to taste
2 tablespoons flour
1 cup white wine
1/2 cup whipping cream; chilled

In a large saucepan over high heat, combine the 3 cups water, apples, the 1/2 cup sugar, and lemon zest and juice. Bring to a boil, reduce heat, cover, and simmer until apples are tender (10 to 15 minutes). In a small bowl whisk together the 2 tablespoons water, flour, and 1/2 cup of the hot soup liquid. Gradually add mixture to soup remaining in saucepan, whisking constantly. Cook over low heat 5 minutes. Remove from heat and add wine; taste and add sugar as needed. Let cool, cover, and chill. Stir in cream and adjust seasoning. Serving Ideas : Serve in chilled bowls. NOTES : Yield: 4 servings. 0 0 3567 0 0 0 0 0 0 0
