Turkish Slices

3/4 cup butter; softened
2 tablespoons sugar
1 cup sugar
7 eggs; separated
2 cups flour
plus flour for dusting
2 ounces semisweet chocolate square
melted and cooled
1/4 cup coarsely ground almonds
3/4 cup apricot jam; or to taste

Preheat oven to 350 degrees. In a large mixing bowl, combine butter, the 2 tablespoons sugar, and 3 of the egg yolks. Cream until smooth and fluffy. Add the 2 cups flour and mix well. Knead dough in bowl until smooth (about 5 minutes). Shape into a ball. Place dough in a 9 by 16-inch baking pan. Dust your hands with flour and spread dough until it covers bottom of pan evenly and is about 1/4 inch thick. Bake, watching carefully, just until edges of pastry begin to turn golden. Remove pastry from oven; leave oven set at 350 degrees. In a large bowl cream together the remaining egg yolks and the 1 cup sugar until fluffy; mix in chocolate. In a bowl beat egg whites until stiff peaks form. Fold in almonds, then fold egg-white mixture into yolk mixture. Spread apricot jam over surface of pastry. Spoon egg mixture evenly over jam and smooth with a spatula. Return pastry to oven and bake until top is set (20 to 25 minutes). Transfer pan to a wire rack to cool completely. With a sharp knife cut pastry lengthwise into 2 or 3 equal strips, then cut crosswise into thin slices. NOTES : Yield: 5 to 7 dozen pieces. 0 0 0 0 0 0 0 0 18 0
