Stuffed Green Peppers cheese/eggs, meats, vegetables 2 1/2 cups Quick Tomato Sauce; see recipe 3 tablespoons long-grain white rice 5 tablespoons water 6 green peppers cut off stems; remove ribs and seed 2 tablespoons butter 1 medium onion; finely chopped 1 pound ground beef 1 egg Salt and freshly ground pepper; to taste Prepare tomato sauce in a small, heavy-bottomed saucepan; set aside. In a small saucepan over medium heat, combine rice and the water. Simmer until water is absorbed (about 10 minutes), then transfer to a mixing bowl. In a skillet over medium heat, melt butter. Add onion and saute until translucent (about 5 minutes). Add onion to rice in mixing bowl, then add meat, egg, salt, and ground pepper; mix well. Fill reserved green peppers with meat mixture. Bring tomato sauce to a simmer and stand peppers upright in sauce. Simmer, covered, until peppers are tender (about 1 hour).
