Rum Cream

4 eggs; separated
2 tablespoons flour
1/2 cup sugar
1 tablespoon vanilla extract
Grated zest of 1 medium orange
2 cups milk
3 tablespoons rum
1 cup whipping cream

In the top pan of a double boiler, combine egg yolks, flour, sugar, vanilla, orange zest, and milk. Whisk to blend, then place over gently boiling water and beat well until thick. Remove from heat, mix in rum, and let cool to room temperature. In a medium bowl beat egg whites until stiff peaks form. Gently fold egg whites into egg-yolk mixture. Spoon into 6 bowls and refrigerate until chilled. In a medium bowl whip cream until stiff peaks form. Serving Ideas : Garnish each serving with whipped cream. NOTES : Yield: 6 servings.
