Potato Palacsinta (Pancakes)

3 large baking potatoes; peeled and grated
3 eggs; lightly beaten
3 tablespoons flour
1/2 cup minced onion; optional
Salt and freshly ground pepper; to taste
Vegetable oil; for frying

In a mixing bowl combine all ingredients except oil. Mix well. In a skillet over medium-high heat, pour in oil to a depth of about 1/4 inch. Drop potato mixture by spoonfuls into hot oil, being careful not to crowd pan. Flatten each mound with the back of a spoon until it is 1/4 to 1/2 inch thick. Fry until golden on the underside. Flip and cook second side until golden (10 to 15 minutes total cooking time). With a slotted utensil transfer pancakes to paper towels to drain briefly, then serve immediately. NOTES : Yield: 6 servings.
