Nut Slice With Mocha Topping appetizers, breads, cheese/eggs butter and flour for baking pan 6 eggs; separated 1 1/4 cups sugar 1 1/2 cups walnuts; coarsely ground 2 tablespoons fine dried bread crumbs 1 teaspoon ground cinnamon 1 teaspoon ground cloves Mocha Topping; see recipe Preheat oven to 350 degrees. Butter and flour a 9 by 12-inch baking pan. In a large bowl beat egg whites until soft peaks form. Gradually add 1/4 cup of the sugar, beating constantly until stiff peaks form. In another large bowl combine egg yolks and the remaining sugar. Beat until thick and fluffy. Gently fold egg-white mixture into egg-yolk mixture alternately with walnuts, bread crumbs, cinnamon, and cloves. Pour batter into prepared pan. Bake until a cake tester inserted in center comes out clean (about 30 minutes). Remove pan to a wire rack to cool completely. Turn cake out of pan and place on a serving plate. Prepare topping. Spread it on top of cake. Dip fork tines in hot water and run them diagonally across topping, scoring entire surface. Serving Ideas : To serve, cut cake into squares or rectangles.
