Xmas Desserts: Passion Fruit Creme Brulee

2 passion fruit
3 medium egg yolks
1 1/2 oz caster sugar
1 284 millilit double cream
2 tablespoon icing sugar

Preheat oven to gas mark 4/180C/350F. Halve passion fruit. Scoop out pulp into 4 ramekins. Whisk yolks and sugar together. Heat cream to boiling point. Whisk hot cream into beaten yolks. Pour cream mixture over passion fruit pulp. Place ramekins in a deep baking tray. Pour hot water around ramekins to about 3/4 of their depth. Bake for half an hour until just set. Remove ramekins, cool and chill overnight. Preheat grill to its highest. Sift icing sugar evenly over the chilled custards. Grill until icing sugar turns brown. Serve. Converted by MC_Buster.
