Xmas Desserts: Lychee Wine Jelly

3/4 pint rose wine
1/4 pint boiling water
4 oz caster sugar
1 425 gram tin lychees
1/2 oz leaf gelatine
1 lemon; juice of

Soak gelatine in 3 tbsp of the rose wine for five minutes. Drain lychees and put in a heatproof serving bowl. Heat together the remaining wine, lemon juice and sugar, stirring until the sugar dissolves. Reduce the heat and mix in the softened gelatine. DO NOT BOIL. Pour wine mix over lychees. Cover and chill until set for about five hours. Converted by MC_Buster. NOTES : This pretty pink jelly makes a refreshing alternative to traditional rich puddings.
