Xmas Buffet: Tricolore Green Bean Salad

1 1/2 lb green beans
1/2 lb cherry tomatoes
2 150 g mozzarella cheeses
4 tablespoon flaked almonds
5 tablespoon olive oil
1 tablespoon orange juice
1 tablespoon white wine vinegar
1 teaspoon grain mustard
3 tablespoon chopped chives
1 salt and freshly ground pepper

Top and tail green beans. Cook the green beans in boiling water for 2-3 minutes until just cooked; drain. Chop beans into 1in/2.5cm lengths. Halve cherry tomatoes. Drain and dice mozzarella cheeses. Dry-fry flaked almonds until golden. Mix together olive oil, orange juice, wine vinegar and mustard. Add chives, salt, and freshly ground pepper to the salad dressing. Toss together green beans, halved cherry tomatoes and diced mozzarella. Mix in salad dressing. Sprinkle flaked almonds over dish and serve.
