Last Minute Christmas Cake good living 1 kg dried mixed fruit 225 gm glace cherries 300 ml stout 150 ml whisky 150 ml orange juice 1 orange; zest of 3 tablespoon black treacle 250 gm unsalted butter; slightly softened 250 gm soft brown sugar 5 eggs; lightly beaten 350 gm plain flour 1 1/2 teaspoon baking powder 2 teaspoon allspice 100 gm brazil nuts; halved 1 marzipan and royal icing for decora; tion 1 Line the cake tin. In a large pan, place the dried fruit, cherries, stout, whisky, orange juice, zest and treacle, and bring to the boil. 2 Simmer gently for 10 minutes. In a large bowl, combine the remaining ingredients and beat together until smooth. Fold in the boiled fruit. 3 Spoon the mixture into the prepared cake tin and level the top. Bake for 3 1/2-4 hours.
