Christmas Kebabs With Satay Sauce

1 tablespoon soy sauce
1 tablespoon olive oil
12 cherry tomatoes
1 red pepper; de-seeded
1 courgette; trimmed
1 green pepper; de-seeded
1 or use a selection of vegetables of; your
1 ; choice
1 fresh coriander and lime wedges; to garnish
1 bay leaves

1 Soak 18 wooden kebab skewers in water for about 20-30 minutes. Cut the vegetables into pieces about 2cm/ 3/4", large enough not to split when threaded onto skewers. Leave the tomatoes whole. 2 Preheat the grill to a medium heat. Combine the soy sauce with oil in a small bowl and season with pepper. 3 Thread a selection of vegetables onto each skewer and brush with the oil mixture.
