Holiday Roast Beef Salad appetizers, meats 8 oz alfalfa sprouts 1 lb roast beef, thinly sliced 1 14 oz. can artichoke hearts, draine; d and halved 1 small red pepper, seeded and cut into str; ips 1/2 cup olive or vegetable oil 1/4 cup wine vinegar 1 salt and pepper 1 chopped parsley Arrange the alfalfa sprouts on a large platter. Roll up the roast beef slices and arrange on top of the sprouts. Place the artichoke hearts between the beef rolls and garnish the center with red pepper strips. Mix the oil, vinegar, and salt and pepper to taste. Spoon over the salad. Sprinkle with chopped parsley. To make ahead, keep the salad and dressing separate until serving time.
