Easy Holiday Fruit Cake cakes, desserts 1 pkg 1 lb 3 oz white cake mix 1 egg 1/4 cup water 1 teaspoon salt 1 teaspoon lemon extract 3 eggs 1/2 cup sifted all purpose flour 1 lb light raisins 1 lb whole pecans 1/2 lb whole candied cherries 1/2 lb candied pineapple, cut into strips. Line two greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans with waxed paper; grease paper. Combine cake mix, egg, water, salt and lemon extract in large bowl of electric mixer. Beat two minutes at medium speed. Add 3 eggs; b eat w minutes longer. Mix flour and remaining ingredients; stir into cake batter. Pour into the two prepared pans. Bake at 275 degrees for about two hours.
