Couscous mediterranean, side dish 1 1/3 cups couscous 2 cups water 2 tablespoons butter 1 1/2 teaspoons salt Add butter to boiling water, stir in couscous, cover and cook for three minutes. Turn off heat and let sit for 5 minutes, if fast cooking couscous. For regular, let sit for 10 - 15 minutes. Stir in salt and fluff before serving. NOTES : Plain, buttery, light and fluffy couscous. A very simple complement to spicy foods and grilled meats. For a change, use your imagination. Try adding nuts, raisins, Middle Eastern spices, sautéed onions, mushrooms, grated mild cheese, cream cheese, celery, grated carrots or peas; or any combination of the above.
