Springerle (Anise Cookies) cookies, ethnic 4 cup flour 4 large eggs 2 cup sugar 1 tablespoon butter 1 anise seed or 4 drops anise oil 1/2 teaspoon baking powder Beat eggs thoroughly; add sifted sugar and butter. Beat for 15 minutes. Add enough sifted flour to make a stiff dough. Roll out about 1/2-inch thick. Sprinkle with flour and press the patterns on the dough. Separate the cakes with a dough cutter and place on a board covered with anise seed or use 4 drops of anise oil stirred into the dough. Keep in a cool dry place overnight. In the morning bake, in a moderate oven, 350ř, a light brown about 12 minutes. ~ Mrs. O. W.
