There is no duck in this meatless condiment--the name is derived from the preparation's use as a dip or sauce for roast duck. Duck sauce is usually made from apricots or peaches, vinegar, sugar, and corn syrup; however, it is the sweet and pungent taste that comes through more than the fruity taste. In Chinese-American restaurants, this reddish-brown condiment is usually set out with hot mustard and fried noodles. There are many brands of duck sauce on the market.
