The come sliced or in chunks in cans ranging from six ounces to many pounds for quantity cooking. The canned bamboo shoots do not require any cooking, but to help eliminate the "canned" taste drain the shoots and rinse them in cold water, then store then in water in a clean jar or other covered container in the refrigerator, changing the water every few days. The shoots willl keep for several weeks this way. Fresh bamboo shoots are avilable in some large cities. The fresh shoots require about fifteen minutes of boiling before they can be used in recipes.
