Saffron Rice

2 tablespoon vegetable oil
1 medium yellow onion, chopped
1 each green bell pepper, chopped
1 cup long-grain rice
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon saffron

Heat oil in a large skillet. Stir in the onion, pepper & rice. Fry over moderate heat, stirring frequently, until the rice becomes golden, about 15 minutes. Add spices & 2 c water & bring to a boil. Reduce heat & simmer about 20 minutes until liquid is absorbed. "The Africa News Cookbook"
