Pansit (Noodles With Pork) ethnic, main dish, pork, vegetables 1 tablespoon oil 2 cloves garlic, crushed 1 lb pork sliced thin or 1 lb ground pork 1/2 lb fresh shrimp, chopped 1 small onion, sliced 6 dried mushrooms (pre-soaked 1 and sliced thin) 2 1/2 cup chicken broth 1 salt and pepper to taste 1 pkg long rice 2 pkg dried noodles 1 green onion, sliced thin Heat oil, fry garlic and pork til slightly browned Add shrimp and fry til shrimp turns pink. Add onions and mushrooms. Fry about 1 minute, then add chicken broth, salt and pepper; bring to a boil. Then simmer about 5-10 minutes. Soak long rice til soft, then cut into 2" lengths. Add long rice, then noodles. Garnish with green onions.
