Cheese Blintzes

1/2 cup sifted flour
1/2 teaspoon salt
2 eggs, well beaten
2/3 cup milk
1 tablespoon melted butter
----FILLING----
1/2 lb dry cottage cheese
2 egg yolks
1/4 teaspoon cinnamon
1 tablespoon sugar
1 salt to taste

Sift dry ingredients together. Combine eggs, milk, and butter; add gradually to dry ingredients, beating until smooth. Pour 3 to 4 tablespoons of batter onto a hot greased griddle. Tip pan to make pancake as thin as possible. Fry only on one side until blistered. Place pancakes one on top of the other until all have been made. To make filling put cheese through a sieve, add other ingredients, mix well. Place a heaping tablespoon of filling in the center of each pancake, on the baked side. Fold over all sides, envelope fashion, bake on griddle until browned, turning to brown on both sides. Serve with sour cream.
