Yorkshire Parkin cakes, ethnic 3/4 lb oatameal 1/4 lb plain flour 1 lb black treacle (molasses) 1/2 lb brown sugar 1 teaspoon ground ginger 1/2 teaspoon mixed spice (nutmeg, 1 cinnamon, allspice, etc) 2 teaspoon bicarbonate of soda 2 tablespoon lukewarm water Gently melt the treacle together with the butter. Mix the oatmeal, sugar, spices with the treacle and butter. Dissolve the bicarbonate of soda with the water and mix that in well. Put batter well-greased and floured shallow baking tins and bake about 20 minutes in a hot oven. [I would line the base of the tins, at least, with greaseproof paper as well].
