Pineapple Plantation Cake

cakes, ethnic, fruits

3 tablespoon margarine or butter
1/2 cup brown sugar
6 slices canned pineapple
12 maraschino cherries
1 ginger cake mix

Melt the 3 T butter or margarine in an 8x2 inch square pan. Add the 1/2 cup of brown sugar and well-drained pineapple slices and cherries. Fill 2/3 full with gingercake batter and bake at 350 degrees for 40 minutes. May substitute white or yellow cake mix. Found on the back of 1973 calendar from Honolulu newspaper.

Yield: 8 servings
