Kaneohe Banana Fritters

1 cup flour
2 teaspoon baking powder
1 tablespoon sugar
1 egg, separated
1/4 lemon juice
3/4 cup milk
1 bananas, halved or cut into
1 diagonal pieces

Sift together flour, baking powder and sugar. Combine egg yolk and lemon juice (recipe does not stipulate amount, but I would assume it was 1/4 cup) and add to dry ingredients. Add milk slowly. Beat egg white. Fold in last. Dip bananas in batter and fry in deep fat. Serve hot. John Grote St. Ann's Altar and Rosary Society, Kaneohe, HI, April 1972
