Chili-Cheese Rice

1 bunch green onions, including some
1 green -- chopped
1 jalapeno chile pepper
1 (optional) -- finely
1 chopped
1/4 cup butter or margarine
3 cup cooked rice
2 cup (8 oz.) monterey jack
1 cheese -- cubed
1 1/2 cup sour cream
2 can (4 oz. ea) green chilies, --
1 drained and chopped
1/2 teaspoon salt or to taste
1/2 cup (2 oz)
1 mild cheddar cheese --
1 shredded

Preheat oven to 350 F. Generously butter a 2-quart casserole. Over medium heat, saute green onions and jalapeno in butter until transparent. Stir in rice, Monterey Jack cheese, sour cream, green chiles, and salt. Pour into casserole. Top with Cheddar cheese. Bake 30 minutes or until mixture is hot and bubbly.
