Cacahuates Enchilados (Peanuts With Chili Powder) appetizers, mexican, chili, spice, snacks 1 teaspoon peanut oil 1 cup unsalted peanuts 10 small cloves garlic; peeled 1 1/2 teaspoon chile powder 1 teaspoon salt In a frying pan large enough to accomodate the peanuts in one layer, heat the oil to smoking point. Add the peanuts and garlic cloves and fry for about 2 minutes, turning them over constantly. Lower the flame a little, add the chile powder and salt, and cook for a minute or two longer, stirring constantly; take care that the chile powder does not burn. Set aside to cool before serving with drinks.
