Dayton's Meatless Chili+

soups, vegetables, chili, healthy, beans

1 1/2 tablespoon olive oil
1 large onion, chopped
4 celery ribs, chopped
1 medium green pepper, chopped
2 centiliter garlic, minced
1 salt and pepper to taste
1 tablespoon brown sugar
1 tablespoon oregano
4 tablespoon chili powder
3 tablespoon cumin
1/4 teaspoon cinnamon
1 can whole tomatoes, (28 oz.)
1 can v-8 juice, (28 oz.)
1 can black beans, (16 oz.)
1 can pinto beans, (16 oz.)
1 can kidney beans, (16 oz.)
1 can chopped green chilies (2 1/2 oz.)

In large pan, heat olive oil. Saute onion, celery, green pepper and garlic until onion is transparant. Add sugar and spices. Saute for 2 minutes. Add remainiing ingredients. Simmer for one hour. Served at Dayton's River Room restaurant, downtown St. Paul during October as part of the Twin Cities Better Health Restaurant Challenge organized by Health Partners.
