Chili Con Cashews chili, mushrooms, beans, vegetarian, nuts 1 clove garlic, minced 2 carrots, grated 2 onions, chopped 2 green peppers, chopped 2 tablespoon oil 1 cup raw cashews 3 cup kidney beans, cooked 4 cup chopped tomatoes, with their 1 liquid 1 teaspoon basil 1 teaspoon oregano 1 teaspoon chili powder, or to taste 1 teaspoon ground cumin 1 bay leaf 1/2 teaspoon salt or less 1 dash pepper 1/4 cup raisins 1/2 cup grated cheese, swiss or 1 cheddar 1/2 cup sesame seeds 1 recipe cornbread or whole 1 wheat pasta 1 optional: 2 tablespoon dry wine or vinegar 1/2 lb mushrooms, sliced 1 medium zucchini, sliced Saute garlic and vegetables (except tomatoes) in oil. Add nuts, beans, tomatoes, seasonings, raisins and wine if used. Simmer for at least 2 hours, until thick, in covered pot or slow-cooker. Serve topped with cheese and seeds, over cornbread or pasta.
