Spicy Migas tex-mex, spice, cheese, eggs 4 tablespoon butter 1/2 chopped yellow onion 1/2 chopped green pepper 2 jalapeno chiles, diced fine 1 tomato, seeded, diced 8 well beaten eggs 4 corn tortillas, cut in 1 strips, and fried, or use 1 tortilla chips 1 cup chedder cheese 1 cup salsa Melt butter in large saute pan, add onion and green pepper and cook about 5 min or until onions are translucent. Add jalapenos, tomato and eggs, scramble until eggs start to set. Stir in tortilla strips. Serve topped with cheese; serve the salsa (and flour tortillas and refritos if desired) on the side.
