Rain's Posole Con Queso main dish, mexican, pork, cheese, casseroles 2 cup drained, rinsed white 1 hominy 5 tablespoon taco sauce to coat hominy 1 cup cooked rice 1 i smallish chopped onion 6 strips crisp bacon, 1 crumbled 1 few chopped mild green 1 chiles (anaheims or 1 thereabouts) 4 oz grated or crumbled sharp 1 white cheddar 1 black pepper to taste 2 tablespoon bacon grease* *if you're not obsessed with cholesterol--it really improves the taste. All the talk of posole inspired me, and while I can certainly take the heat, I sometimes like a dish that's MILD and flavorful. So here's what I made for dinner tonight: In a well-oiled 9" pan or skillet, mix well the ingredients. Sprinkle with several tbsp. of water and bake uncovered at 400" for about 25-30 minutes.
