Jerked Pork Chops > Jojo@leland.stanford.edu pork, spice, caribbean 1 tablespoon allspice 1 tablespoon thyme 1 1/2 teaspoon cayenne 1 1/2 teaspoon black pepper 1 1/2 teaspoon sage 3/4 teaspoon nutmeg 3/4 teaspoon cinnamon 1 tablespoon salt 2 tablespoon garlic powder 1 tablespoon sugar 1 mix these together. add: 1/4 cup olive oil 1/4 cup soy sauce 3/4 cup white vinegar 1 tablespoon lime juice 1 tablespoon lemon juice 1 scotch bonnet pepper, minced 1 (serrano or jalapeno ok) 1 cup white onion, chopped 3 green onions, chopped Marinade meat at least one hour. Grill or broil. *even though this recipe is designed for pork, it would probably be good on chicken.
