Tuna With Star Fruit And Chilli

4 tuna steaks, 25mm thick or substitu; te chicken fillets
2 tablespoon lime juice
1/3 cup macadamia nuts
2 onions, sliced
3 single garlic, cloves
6 chillies, fresh, red, chop'd
1 tablespoon ginger, fresh, chopped
1 tablespoon cardamon, ground
1/2 teaspoon turmeric, ground
1 tablespoon mustard seed oil
1/2 cup water
1 lemon grass stalk
2 star fruit, sliced widthwise
1 [or 3 lemon slices]
1 fresh coriander sprigs

Pour lime juice over the tuna and leave to marinade, covered, for 1 hour. Put macadamia nuts, onion, garlic, chillies, ginger, cardamon and turmeric into the food processor or blender and blend to a smooth paste. Heat the oil in a large frying pan and add the blended paste and the water. Let the mixture simmer for 5 minutes and then add the lemon grass and star fruit. Stir and let simmer for a few minutes. Add the tuna steaks and cook over a medium heat, turning the steaks carefully several times to coat them with the paste. Add a little more water if the paste looks like drying up. Cook the steaks for about 8 minutes if you like them rare or up to 15 minutes for well done. **If using chicken, then this will be need to be cooked longer. Serve on warmed plates with steamed rice, garnished with coriander sprigs. Serve with a fresh green salad. From: Kevin Jcjd Symons Date: 05 Nov 97
