Broccoli, Chicken And Chili Cheese Gratin appetizers, chili, chicken 2 cup blanched broccoli -- 1 chopped 2 cup cooked chicken -- diced 1/2 cup mayonnaise 1 cup monterey jack or cheddar 1 cheese -- grated 1/3 cup parmesan cheese -- grated 2 teaspoon ground cumin 1 can (4 oz)chiles -- drained and chopped 1 cup tomatoes (or one 14 oz can, 1 drain & chop) -- peel, seed 1 & chop 2 tablespoon minced fresh cilantro 1 salt and pepper 1 tablespoon unsalted butter or 1 margarine Preheat oven to 400 F. In a large bowl, combine the broccoli, chicken, mayonnaise, Monterey or Cheddar cheese, all but 2 Tbs of the Parmesan, the cumin, chilies, tomatoes, cilantro, and salt and pepper to taste. Transfer the mixture to a buttered baking dish, sprinkle with the remaining Parmesan, and dot with the butter. Bake in the oven for 20 to 25 minutes. Serve hot with taco chips or toasted pita triangles. Serves 6 to 8 as an hors d'oeuvre.
